About the funded R&D project
Magellan’s brazzein programme rests on fermentation: the sweet protein has a taste profile far closer to sugar than conventional non-caloric sweeteners, and whether it reaches consumers depends on whether it can be produced at predictable cost and scale. This project develops a scalable, predictable fermentation process, and is the earliest of the company’s Innovate UK awards in this line of work.
