About the funded R&D project
Dietary fibre demonstrably reduces the risk of obesity, type 2 diabetes, heart disease and cancer, yet 91% of UK adults fall short of the recommended daily allowance, against an NHS burden of around £29bn a year. Rather than asking consumers to change what they eat, this project engineers a Rhizopus fermentation platform that raises the fibre content of wheat flour itself, intervening at ingredient level.
