About the funded R&D project

Scaling up production of brazzein, a sweet protein, through a novel approach. Production cost is the binding constraint on protein sweeteners: the taste advantage over conventional non-caloric sweeteners is established, and whether it reaches consumers depends on manufacturing economics.
